Pepper Jack Fauxmaggio Burritos

  • Pepper Jack Spread
  • Whole wheat or corn tortillas
  • Cooked beans or lentils
  • Cooked brown rice
  • Sliced avocado or guacamole
  • Salsa
  • Shredded lettuce or cabbage
  • Optional: additional veggies such as bell peppers, onions, and mushrooms


  1. Heat the tortillas in a dry skillet over medium heat for about 15-20 seconds per side.
  2. Spread a generous amount of Pepper Jack Spread on each tortilla, leaving a little room around the edges.
  3. Add beans or lentils, rice, avocado or guacamole, salsa, and shredded lettuce or cabbage on top of the spread.
  4. Optional: add additional veggies such as bell peppers, onions, and mushrooms.
